Beef Stew


2 1/2 lbs. stew meat
1 tlbs. Paul Prudhommes Meat Magic
salt & pepper to taste
1/2 cup flour

Mix together in plastic storage bag. Fry up in stock pot until golden brown on all sides. Add 2 cans beef stock and simmer until meat is tender. This takes about 1 1/2 hours. You may need to add more beef stock. Add 1 chopped onion and chopped celery to your liking. Slice carrots and add them before meat is all the way tender. After meat is tender add three potatoes chunked and cubed. When these are done you can add other can vegetables if you like. We like corn and peas in ours. I also add 1 onion and celery to cook along with potatoes and carrots. Mmmm tasty!!

Pumpkin Squares


Beat together until light and fluffy.
4 eggs
1 2/3 cup sugar
1 cup oil
1 - 15 oz. can pumpkin

Stir together dry ingredients and add to above mixture and mix well.
2 cups flour
2 tsp. cinnamon
1 tsp. soda
2 tsp. baking powder

Bake ungreased cookie sheet 10x15x1 350 for 25 to 30 minutes

frosting for pumpkin squares
1/2 cup butter
8 oz. cream cheese(softened)
1 lb. powdered sugar
1 tsp. vanilla
1 cup walnuts

Fried Chicken


I put my chicken in a storage bag, add a little flour and shake it around. I let all the excess flour out then I put some red pepper in the bag and shake it around. Then put the chicken in the deep fryer at 375 for 20 minutes. It's mmmm tasty!!!

Joyce's Spaghetti

1 1/2 lbs. ground chuck
3/4 cup green peppers chopped
3/4 cup onion chopped
6 cloves garlic minced and chopped
3 tlbsp. paprika
3 tsp. marjoram
3 tsp. thyme
3 tsp. oregano
2 cans tomato sauce (15 oz.)
1 lb. spaghetti(cooked)

brown the hamburg, onions and green peppers. Add the spices and sauce and simmer for 1 hour. Add on top of spaghetti. Mmmm tasty!!

Apple Dumplings


pastry dough
2 tlbs. finely ground pecans pare and core 4 apples
1 cup all-purpose flour
pinch salt
1 tlbs. sugar
1 stick unsalted butter, cold and cut into small chuncks
1 egg white, chilled
2 tlbs. ice water

In a food processor grind pecans then add flour, salt, and sugar. Add the butter and process until the mixture resembles coarse crumbs. Pour in the egg white and blend it in to bind the dough until it holds together, if it is crumby, add the ice water, 1 tlb. at a time. Wrap the dough in plastic wrap and place in refrigerator for at least 30 minutes.

syrup for dumplings
2 cups water
3 tlbs. butter
1/2 tsp. cinnamon

filling for apple cavities
1/2 cup sugar
1 1/2 tsp. sugar
1 tlbs. butter

pour hot syrup around dumplings and bake 425 for 40 to 45 minutes

Green Chili


3 green peppers chopped
1 bunch cilantro chopped
1 bunch green onions chopped
2 lbs. tomatilos(take cover off & quarter)
4 - 4oz. cans diced green chilies
4 tsp. cumin
1 tsp. cayenne pepper
4 cups water
8 cloves garlic, peeled and minced
1 lb. ground pork 1 bob evans zesty sausage
1 can northern beans (48 oz.)

Place everything except the meat and beans in the stew pot. Let it all cook until the tomatillos are completely broken down. It should look thick and soupy. You can add salt and pepper to taste and then add cooked meat and beans. Mmmm tasty!

Fried Ice Cream


3 cups vanilla ice cream
1/4 cup heavy whipping cream
1 1/4 cups finely crushed cinnamon crackers

Using a 1/2 cup ice cream scoop, place six scoops of ice cream in a plastic container. Freeze

Place heavy cream in a shallow bowl. Put cracker crumbs in a different bowl. Dip ice cream balls in heavy cream then in the cracker crumb mixture. Freeze overnight. Then deep fry for about 15 seconds in 375 degrees. I drizzle honey on mine or chocolate to if you desire. Mmmm tasty!

Rice Pudding


6 cups milk
5 cups water
1 stick butter
2 1/4 cups sugar
2 1/2 cups rice

Put in a large sauce pan and bring to a boil. When mixture boils add the rice. Bring to a boil, simmer until it starts to thicken. Just before it gets very thick, beat 4 eggs in a 2 cup measuring cup. Add enough water to make a full 2 cups. Take a small bowl of rice mixture, gradually add egg/water mixture to it. Then return this to the rest of the rice mixture. Return it to starting to boil, remove from heat and pour in 1 tsp. vanilla. Add cinnammon and nutmeg to taste. I use real nutmeg. This is the best rice pudding you will put in your mouth!! Mmmm tasty!!

Banana Cream Pie or Coconut Cream Pie


2 cups milk
1 cup sugar
3 egg yolks beaten
3 tlbsp. corn startch
1 tsp. vanilla

Crust
1 individual pkgs. graham crackers crushed
1 stick butter(melted)
1/2 cup sugar

Put all ingredients together and cook on stove until it thickens on medium heat. After it thickens let it cool off in refrigerator for about an hour. If you want banana cream pie put banana's in it. If you want coconut cream pie put coconut in about 1 1/2 cups. Then make homemade whipping cream with heavy cream. It's the best. Mmmm tasty!

Smothered Chicken


Breast Chicken Strips
Chipotle seasoning

Sprinkle chipotle seasoning on checken strips. Put a couple talblespoons olive oil in frying pan. Add seasoned chicken strips and cook until done.

Sauce
1/2 cup white cooking wine
1 tlbsp, minced shallot
1/4 cup heavy cream
12 tlbsp. unsalted butter, cut into small pieces
salt and pepper to taste

Bring wine and shallot to a simmer in heavy bottom sauceopan. Reduce the mixture by half. Add the heavy cream and reduce the mixture by half again. Then reduce the heat under the pan to low. Whisk in pieces of the butter a few at atime until all of the butter has been incorporated and the sauce is thick. Make sure you whisk during the entire time the butter is being incorporated. Add salt and pepper to taste.

Bacon Pieces
Tomatoes-chopped

Add sauce to top of chicken and then add bacon pieces and tomatoes! Mmmm Tasty!!
This can be put on top of angle hair pasta as the picture or just alone as a chicken dish with other sides.

Smack your Mamma Mac n Cheese


4 Tlbsp. flour
6 Tlbsp. flour
3 cups heavy cream
1 tlbsp. tomato paste
1/2 lb. Cheddar Cheese
1/2 lb. 2 year aged Cheddar Cheese
1 pkg. smoked Goud Cheese
salt and pepper to taste
2 tsp. chipotle seasoning
2 cups toasted panko bread crumbs
6 oz. shredded parmesan cheese
1 pkg. martelli macheroni-cooked

In large saucepan over medium heat, melt the butter. Stir in the flour and cook, stirring constantly to break up any lumps. Add the tomato paste and cook until the sauce begins to simmer and thicken, about 5 minutes. Add the cheeses stirring until they are melted and blended with the sauce. Season with salt and pepper to taste. Add the chipotle seasoning.

Add the cooked macaroni to the sauce and stir until well combined. Pour unto prepared baking dish. Top with toasted panko bread crumbs. Bake for 20 minutes. Add the parmesan cheese and bake for 5 more minutes. I get the martelli macheroni at Whole Foods. It is Mmmm tasty!

Homemade Waffles


1 3/4 cup flour
2 tsp. baking powder
1 tlbsp. sugar
1/2 tsp. salt
3 egg yolks beaten
3 egg whites whipped
1/3 cup crisco oil
1 1/2 cup milk

Mix everything together but the egg whites. Add them at the end by hand. Put into waffle maker and Mmmmm tasty!!

Reuben Soup


1/2 cup chopped onion
1/2 cup celery
2 tlbsp. butter
1 cup chicken broth
1 cup beef broth
1/2 tsp. soda
2 tlbsp. cornstarch
2 tlbsp. water
1 can saur kraut drained
2 cups heavy cream
2 cups chopped cooked corn beef
1 cup swiss cheese
salt and pepper to taste

In large saucepan, saute onion and celeryin butter till tender. Add broth and baking soda. Combine cornstarch and water; add to pan. Bring to boil; boil for 2 minutes, stirring occasionally. Reduce heat.

Add saur kraut, cream and corned beef; simmer and stir for 15 minutes. Add cheese; heat until melted. Add salt and pepper. Mmmm tasty!!

Bread Pudding


4 eggs (beat)
1/2 cup sugar
1 tsp. vanilla
4 cups milk
10 slices buttered bread(cut in cubes)

Mix all ingredients together then add buttered bread cubes. Put in 9 x 13 glass baking dish.
Bake at 350 for about 1 hour. Stick knife in the center, Has to come out clean. Refigerate. Mmmm tasty!

Beignets


1 1/2 cups buttermilk
1 tsp. salt
3 Tlbsp. sugar
1 tsp. soda
2 1/2 cups flour
3 tlbsp. melted fat

Put dry ingredients in medium mixing bowl. Add buttermilk and stir by hand. Add melted fat.
Flour your counter to roll them out. Put flour on your hands and put it back in forth to make a ball then roll them out and cut them in squares. Deep fry them till they are light brown on both sides. Sprinkle powdered sugar on them. We like ours with syrup and butter. Mmmm tasty!

Creme Brulee


4 eggs
1/3 cup sugar
2 cups heavy cream
1 tsp. vanilla
dash salt

Use only egg yolks. Put in small bowl, set aside. Next put sugar in another bowl. Add heavy cream. Stir gently with wisk. Put in microwave for 2 minutes to dissolve sugar. When sugar mixture is done......stir to make sure sugar is dissolved. Stir in eggs and wisk well. Pour in ramekins. Put in pan and add water to bottom. Bake 325 for 40 minutes. Mmmm tasty!

Ultimate Creamed Corn


2 bags frozen corn
4 pkg. cream cheese
1 cup milk
1/2 cup butter
2 tsp. sugar
1 tsp. salt
1/4 tsp. salt

Spread corn over bottom of slow cooker. Top with cream cheese cubes. In small bowl, stir together remaining ingredients; pour over corn and crea cheese. Cook on high for 2 to 3 hours. Stir well before serving! Mmmm tasty!

Pecan Topped Cornbread

1 cup cornmeal
1 cup flour
1/3 cup sugar
1/4 cup butter, melted
2 tsp. baking powder
1/4 tsp. salt
3 eggs
1 can cream style corn
1/4 cup chopped pecans

Honey Butter
1/2 cup butter softened
1/4 cup honey

Preheat oven 375. Spray 8 or 9 inch round pan. In medium bowl stir all ingredients but pecans until blended, then add finely chopped pecans to batter. Save some for the top

Homemade Noodles

4 cups flour
8 eggs

I use a pasta machine if you don't have one you have to put them in about 4 different balls. Roll them out and let them stand for awhile to dry. When you can roll them lengthwise without sticking then cut them and unroll them. Homemade noodles are soooooooooo much better than store ones!! Mmmm tasty!!

Cream Cabbage Soup


2 large cabbage cut up
2 onions chopped
3 blocks cream cheese
1 cup heavy cream
2 pkg. sausage

Boil cabbage and onions till soft. Only add enough water to cover cabbage. After cabbage is cooked add cream cheese and heavy cream. Cut up sausage in slices and add to soup. Mmmm tasty!!

Oatmeal Raisin Cookies


1 cup brown sugar
1 cup quick oats
1/2 cup white sugar
2 1/4 cups flour
2 sticks butter
1 tsp. soda
2 tbsp. honey
1 1/2 cups raisins
2 tsp. vanilla
2 cups walnuts
2 eggs

Cream sugar and butter. Add eggs one at a time. Then add honey and vanilla. Add quick oats then the dry ingredients. Add raisins and nuts. Bake 325 Mmmm tasty!

Sugar Cookies


2 cups sugar
1 tsp. soda
2 sticks butter
2 tsp. baking powder
2 eggs
1 cup milk
1 tsp. vanilla
5 cups flour

Cream sugar and butter. Add eggs one at a time, then vanilla. Add dry ingredients alternately with milk. They are to be rolled out and cut in whatever shape. Mmmm tasty!!

Chocolate No Bake Cookies


2 cups sugar
1/2 cup milk
4 tlbsp. nestle cocoa
1 stick butter

Bring to boil for 1 1/2 minutes.......remove from stove

1/2 cup peanut butter
1 tsp. vanilla
3 cups quick oats

Cream in and then quickly drop on wax paper. Let them stand till they harden! Mmmm tasty!!
