Fried Ice Cream


3 cups vanilla ice cream
1/4 cup heavy whipping cream
1 1/4 cups finely crushed cinnamon crackers

Using a 1/2 cup ice cream scoop, place six scoops of ice cream in a plastic container. Freeze

Place heavy cream in a shallow bowl. Put cracker crumbs in a different bowl. Dip ice cream balls in heavy cream then in the cracker crumb mixture. Freeze overnight. Then deep fry for about 15 seconds in 375 degrees. I drizzle honey on mine or chocolate to if you desire. Mmmm tasty!

Rice Pudding


6 cups milk
5 cups water
1 stick butter
2 1/4 cups sugar
2 1/2 cups rice

Put in a large sauce pan and bring to a boil. When mixture boils add the rice. Bring to a boil, simmer until it starts to thicken. Just before it gets very thick, beat 4 eggs in a 2 cup measuring cup. Add enough water to make a full 2 cups. Take a small bowl of rice mixture, gradually add egg/water mixture to it. Then return this to the rest of the rice mixture. Return it to starting to boil, remove from heat and pour in 1 tsp. vanilla. Add cinnammon and nutmeg to taste. I use real nutmeg. This is the best rice pudding you will put in your mouth!! Mmmm tasty!!

Banana Cream Pie or Coconut Cream Pie


2 cups milk
1 cup sugar
3 egg yolks beaten
3 tlbsp. corn startch
1 tsp. vanilla

Crust
1 individual pkgs. graham crackers crushed
1 stick butter(melted)
1/2 cup sugar

Put all ingredients together and cook on stove until it thickens on medium heat. After it thickens let it cool off in refrigerator for about an hour. If you want banana cream pie put banana's in it. If you want coconut cream pie put coconut in about 1 1/2 cups. Then make homemade whipping cream with heavy cream. It's the best. Mmmm tasty!
